Homemade mayo.......seriously, try it!!!

So we were totally out of mayo the other day. I had been itching to try making it by hand. Eggs and oil.....how hard could that be, right? Oh gosh it was so easy!!  I used the Julia Child blender method.

So......you need
1 egg
1/4 tsp dry mustard
1/2 tsp salt
1 Tbsp vinegar/lemon juice
1 cup oil (olive, canola, or similar)

First, crack an egg in your blender, add the mustard and salt then fire that puppy up on high for about 30 seconds.
Turn blender on low and add vinegar or lemon juice. I went with lemon juice. Blend on low for 10 seconds.
Slowly pour in the oil.....just drizzle it in there. I should also add, while you *can* use olive oil, I dont recommend it, unless you REALLY want that danky olive-y taste in your mayo. Not that I now from experience or anything. At least cut it with some kind of salad oil. You can use canola or whatever. I dont know if this would work with coconut oil......I will try it when my current jar runs out. Anyway, as you are slowly adding the oil you will notice it just magically turns into thick yellowish glop.
This is your finished product. It is FAB!!! The texture and flavor is amazing!! I will never go back to store bought mayo. Pour it in a quart sized mason jar and enjoy your thriftiness.......one less thing to buy! YEAH!!!
